Pomegranate Pork Recipe

Did you know pomegranates are loaded with nutrients including fiber, vitamins, and minerals? These nutritious fruits are thought to be a superfood. 

Try this recipe for Savory Pomegranate Pork: 

Ingredients: 

  • 1/2 tsp. Cinnamon 
  • 1/2 tsp. Cumin 
  • 1 tsp. Paprika 
  • 2 tbsp. Olive Oil 
  • 2 Pork Tenderloins 
  • 1 cup Pomegranate Juice, unsweetened 
  • 1 1/2 cups Pomegranate Arils 
  • 2 tsp. Balsalmic Vinegar 

Directions: 

  1. Heat oven to 350 degrees F 
  2. In a medium bowl, combine the dry spices
  3. Season the tenderloins with the mixture 
  4. In a large skillet, heat olive oil over medium heat for 1-2 minutes (it should get hot but not smoky) 
  5. Reduce heat, add pork and cook until browned all over 
  6. Transfer tenderloins to a baking dish or sheet and bake for 20 minutes 
  7. When baking is finished, remove and transfer to a cutting board, cover with foil and let the meat rest for 10 minutes
  8. In a medium skillet, over medium heat, add pomegranate juice and let it come to a boil for 2-3 minutes. 
  9. Remove from heat 
  10. Drizzle juice, balsamic oil, and pomegranate arils over top of the tenderloins before serving 

Serve with roasted seasonal veggies. My favorite is Brussels sprouts and butternut squash.
