Pear and Walnut Salad

Try this light and refreshing recipe for a crisp pear and walnut salad. 


  • 1 1/2 Tbsp. Shallots, minced 
  • 2 Tbsp. extra virgin Olive Oil 
  • 2 Tbsp. White Wine Vinegar 
  • 1/4 Tsp. Dijon Mustard 
  • 1/4 Tsp. freshly ground Black Pepper 
  • 6 cups of baby Arugula Leaves 
  • 2 Pears, thinly sliced 
  • 1/4 cup Toasted Walnuts. chopped 
  • 1 small Red Onion, sliced 


  1. For the dressing combine shallots, olive oil, white wine vinegar, dijon mustard, and black pepper in a large bowl and stir with a whisk. 
  2. Add arugula, red onion, and pears to the bowl. 
  3. Toss to coat with dressing. 
  4. Place 1 1/2 cups of salad onto each plate.
  5. Sprinkle with 1 tbsp. walnuts.
  6. Serve and Enjoy!
