Overnight Oats Recipe

Not only are overnight oats delicious, but soaking your oats overnight helps to break down the starches and opens them up so your body can absorb the nutrients more efficiently. 


  • 1/3 cup Coconut Yogurt or Almond Yogurt 
  • 1/2 cup Rolled Oats (Gluten-Free) 
  • 2/3 cup Unsweetened Coconut Milk or Almond Milk 
  • 1 tablespoon Chia Seeds or Ground Flaxseed 
  • 1/2 teaspoon Vanilla Extract 
  • Pinch of Salt 
  • 0-2 tablespoons Honey or Maple Syrup 
  • Optional: Unsweetened Coconut, Nuts, Cinnamon, or Berries 


  1. Whisk together all ingredients in a medium-sized mixing bowl. 
  2. Spoon into a jar with a tight-fitting lid
  3. Place in the refrigerator with lid on for at least 4 hours, but preferably overnight
  4. Add coconut flakes, nuts, or berries before eating

Makes 1 Serving
