Loaded Veggie Turkey Chili

Warm up on these cold days with a big pot of Loaded Veggie Turkey Chili.

Here's the recipe. ⬇️



  • 1 1/2 tbsp. extra virgin Olive Oil or Avocado Oil 
  • 1 large Onion, diced 
  • 2 Garlic cloves, minced 
  • 1 Red Chili, seeded and diced small 
  • 1 tsp. Cumin 
  • 1 large Carrot, peeled and diced 
  • 1 large Celery Stalk, diced 
  • 1 small Yellow Bell Pepper, seeded and diced 
  • 12 oz. Lean Ground Turkey 
  • 4 medium Ripe Tomatoes, diced 
  • 8 oz. White or Black Beans 
  • 2 cups Baby Spinach 
  • Freshly Ground Pepper 
  • 1/4 cup Plain Greek Yogurt 
  • Cilantro to garnish or substitute with chopped chives



  1. Place a large saute pan over medium-high heat, then drizzle with oil 
  2. Add the onion, garlic, and red chili. Saute for 2 minutes or until tender
  3. Sprinkle the cumin over the onion mix and stir well
  4. Next, add carrot, celery, and bell pepper. Cook for 5 minutes or until the veggies begin to get tender, stirring occasionally
  5. In a separate pan, brown the ground turkey in the remaining oil over medium heat, then transfer it to the veggie mix 
  6. Add tomatoes and beans, then cook for 8 minutes or until the tomatoes have broken down and most of the liquid has evaporated, stirring occasionally 
  7. Stir in spinach and remove from heat 
  8. Season the chili to taste with freshly ground black pepper 
  9. Spoon into serving dishes, and top with 1 tbsp. of greek yogurt and garnish with cilantro or chives, and serve.
