Honey-Lime Chicken and Strawberry Salad Recipe

Fresh ingredients, hearty servings, and delicious flavor. This salad will not disappoint on a hot summer day. 

Ingredients: 

  • 1 lb. Chicken Breast, cut into 3/4 inch pieces
  • 1 tablespoon Coconut Oil 
  • 1/2 Lime, juiced 
  • 1 tablespoon Honey 
  • 6 Strawberries, sliced 
  • 1/2 Avocado, diced 
  • 1/2 Cucumber, peeled and chopped 
  • 4 cups Romaine Lettuce, shredded 
  • Pinch of Salt 

Directions: 

  1. Heat Coconut Oil in a skillet over medium-high heat. Add Chopped Chicken and saute until the chicken is nearly cooked. (about 10 minutes) 
  2. Add Lime Juice and Honey to the pan. Stir to coat the chicken. 
  3. Cover pan. Lower heat to medium, and let the chicken finish cooking, about 5 minutes. Set aside. 
  4. In a separate bowl, add salad ingredients and toss 
  5. Place chicken over the salad greens, drizzle with Strawberry- Lime Dressing

Dressing Recipe: 

Ingredients: 

  • 1/2 quart of Strawberries 
  • 1/4 cup Fresh Squeezed Lime Juice 
  • 1 tablespoon Honey 
  • 1/4 cup Olive Oil 
  • 1/2 teaspoon Salt 

Directions: 

  1. Add ingredients to a blender 
  2. Blend until smooth 
  3. Store in refrigerator for up to 10 days
