Grilled Salmon Salad

Refreshing and healthy grilled salmon salad is a great summer dinner recipe. 

Ingredients: 

  • 1/4 cup Olive Oil 
  • 1 tsp. minced Garlic 
  • 2 Avocados, cubed
  • 1/4 cup chopped Cilantro 
  • 1/4 cup fresh Lime Juice 
  • 1 Tomato, diced 
  • 3 Salmon fillets 
  • 1 Red Onion, sliced into rings 
  • 1/4 cup extra virgin Olive Oil 
  • 1 head Romaine Lettuce (remove exterior and hard shell, chop remaining) 
  • Optional Ingredients: Kalamata Olives and Goat Cheese 

Directions: 

  1. In a bowl, combine olive oil, lime juice, garlic, and cilantro. Whisk together until well blended. 
  2. Add avocado and tomatoes, stir and set aside
  3. Lightly coat salmon and onion rings with the remaining olive oil. Grill both until onions are browned and salmon is cooked through. 
  4. Place romaine lettuce in a large bowl and add half the dressing. Top with salmon and onion rings 
  5. Pour the remaining dressing over the top of the salmon and onions. 
  6. Top with optional ingredients: kalamata olives and goat cheese
  7. Serve immediately and enjoy!
