Paleo Tacos

Taco night done right!

Simple, Quick and Healthy Paleo Tacos. You'll have dinner on the table in under 30 minutes!

Ingredients: 

For the Meat 

  • 1 tablespoon coconut oil 
  • 1/2 chopped onion 
  • 1 pound grass-fed ground beef (95% lean) 
  • 1 teaspoon dried oregano 
  • 1 teaspoon dried basil 
  • Pepper to taste 

For Taco Shells 

  • 6-8 large Romaine lettuce leaves 

Toppings: 

  • 1/2 cup guacamole 
  • 1 red bell pepper, chopped 
  • 3/4 cup romaine lettuce, chopped 
  • 1/2 red onion, chopped 
  • Optional: a handful of sliced cherry tomatoes 

Directions: 

  1. In a medium skillet, heat oil over medium heat for about 1 minute 
  2. Add the onion, basil, oregano, and pepper and sauté until lightly browned, about 2 minutes 
  3. Add the ground beef and sauté 7-10 minutes or until cooked to your liking, stirring every few minutes 
  4. While the beef is cooking, wash and chop toppings and lay out Romaine lettuce leaves on serving plates 
  5. When the beef is cooked, add 1-2 tablespoons to each lettuce wrap and add the toppings 
  6. Serve and Enjoy!
