Coconut Vanilla Chia Pudding

- 2 cups fresh almond milk
- 2 tbsp coconut palm sugar (or substitute dehydrated cane)
- 1/2 tsp vanilla extract
- 3–6 tbsp chia seeds
- 2 tbsp shredded coconut (optional)
- Mix together almond milk, sugar, and vanilla until combined.
- Stir in chia seeds. Let them swell for about 20-30 minutes, stirring constantly.
