Lemon Salmon with Avocado Salsa

Salmon is a rich source of omega-3 fatty acids, which have been shown to reduce inflammation, lower blood pressure, and prevent diseases. It's also a great source of selenium, vitamin B12, and niacin. Here's a yummy salmon recipe you'll want to try. 

Ingredients

Salmon: 

  • 2 (5 oz.) Salmon Filets 
  • 2 tsp. Olive Oil 
  • 1/2 Lemon (zest the peel) 
  • 1 tsp. Fennel Seeds 
  • 1 tsp. Mustard Seeds 
  • Ground Pepper to taste 

Avocado Salsa Ingredients: 

  • 1/2 Lemon, juiced 
  • 1 Avocado, chopped 
  • 2 Roma Tomatoes, chopped 
  • 1 tbsp. Olive Oil 
  • 1 Onion, finely chopped 
  • Ground Pepper to taste 

Directions: 

  1. Heat oven to 450 degrees 
  2. Place salmon on a baking sheet or glass pan. 
  3. Drizzle olive oil over the top of the salmon filets 
  4. Sprinkle lemon zest and seeds over the top of the salmon 
  5. Add pepper to taste 
  6. Bake for 10-12 minutes 
  7. Prepare avocado salsa in a small bowl
  8. Chop avocado, tomatoes, and onion
  9. Drizzle lemon juice and olive oil 
  10. Add pepper to taste and gently toss
  11. Add salsa over the top of the salmon before serving
