Baked Chicken Kabobs

This is an easy, healthy and tasty recipe for a healthy dinner for two! Double the recipe for the whole family!

Makes 2 Servings 

Ingredients: 

  • 1/4 cup Olive Oil 
  • 2 Lemons 
  • 2 Cloves of Garlic (minced)
  • 2 Basil Leaves (chopped) 
  • Sea Salt and Pepper to Taste 
  • 8 oz. (280g) Organic Chicken Breast (skinless, boneless) cute into bite size chunks 
  • 2 Large Handfuls Mixed Salad Greens 

Directions: Preheat oven to 450 degrees 

1. In a bowl, whisk together olive oil, the juice and zest from one lemon, garlic, basil, salt and pepper. 

2. Place chicken breast in a shallow pan pour dressing over (Anor add ingredients to a 1 quart- 1 liter freezer bag and add chicken slices) Marinate in the refrigerator for a minimum of 2 hours.

3. Line a broiler pan with tin foil or grease with butter or coconut oil

4. Remove chicken from the refrigerator. Thread chicken onto skewers. (If using wooden skewers soak them for about 20 minutes before use) 

5. Place under broiler for 20 minutes flipping and basting halfway through. (They may need to cook longer depending the size of your chicken chunks)

6. Place salad greens in a bowl and toss with juice from one lemon. 

7. Plate greens and top with chicken skewers 

8. Serve and Enjoy

449 Calories; 35g protein; 8g Carbohydrates; 3g Dietary Fiber; 5g Net Carbs; 2g Sugar; 32g Fat 

There is no need to exactly measure the greens, you can't have too many! 

P.S. In the warmer months you can make this same recipe and cook on the barbecue.
